Delicious, healthy vegan desserts (no sugar, no maida)

  • In your quest to lose weight, eat healthy and look good, one of the first vices you try to completely eliminate from your diet is dessert. But what if your desserts were packed with nutrition, all natural ingredients and sans sugar and maida? Chefs at Atmantan Wellness Centre, Mulshi, give us recipes of some of the healthiest desserts they serve at their idyllic luxury wellness destination spa.

  • Flourless beetroot and chocolate cake – Mix
    200 g freshly grated coconut, 400 g grated beetroot, 50 g coconut powder, 200 g almond meal (grounded), 80 g raw cacao and 1 tsp baking powder. Mix 15 soaked dates in a blender, then add 5 eggs and 1 tsp vanilla.
    Manually mix everything together and bake at 180 degrees for 30 minutes.

  • Coconut and chocolate cake – To make the base, mix 120 g almonds in a blender and then add 150 g soaked dates,
    3 tbsp cacao and 3 tbsp desiccated coconut.
    Press the base on the bottom of a cake tin.
    For the filling, blend 150 g soaked dates and then add 250 g soaked cashews, 3 tbsp coconut oil, 3 tbsp shredded coconut and
    1 teaspoon vanilla.
    Pour on top of the base and keep it in fridge for at least 4 hours before cutting.

  • Fig and ginger energy balls – Add 120 g tahini, 2 tbsp honey, 100 g dried figs and 30 g crystallized ginger in the food processor until it gets a smooth consistency. Add 2 tablespoons ground flaxseeds, 3 tablespoons sesame seeds, 3 tablespoons pepitas or sunflower seeds, 6 tablespoons almond meal
    and roll into balls.

  • Spicy raw brownies – Blend 1 cup cashews in a food processor. Add 1 cup soaked dates, 2 tbsp coconut oil, 3 tbsp cacao, 2 tbsp almond meal and a pinch of cayenne pepper and Himalayan salt. Mix until it forms dough. Add a bit of water if necessary.
    Add 2 tbsp goji berries and 2 tbsp pistachios. Line a small square tray with baking paper and press mix evenly. Refrigerate for two hours and cut into squares.
