Healthy dessert recipe – Coconut apple barfi

Indulgence during festivals is almost a given. There is no harm in occasional indulgence, of course, but the trick lies in selecting the right foods. For instance, maida and sugar can completely ruin your weight loss goals. The best bet would be to replace maida and sugar with healthier ingredient swaps in dessert recipes. This healthy dessert recipe of coconut apple barfi by Maharaj Jodharam Choudhary of Rajdhani Thali is one of those lesser-evil desserts you could cheat on during festivals. Coconut is low in sodium and high in potassium and therefore it’s an excellent food for people suffering from high blood pressure. Coconuts are also known to increase your metabolic rate. 2 tbsp, grated (fresh) coconut
3 tbsp ghee
3 tbsp coarsely grated apples
2 tbsp milk powder
3 tbsp jaggery
½ tsp cardamom powder
a pinch saffron (soaked 1 tbsp warm milk or water)
a pinch salt
2 tbsp, chopped pistachios
2 tbsp, chopped almonds
1 tbsp dried rose petals

 Grease a plate with a bit of ghee and set aside.
 Roast the coconut in a large pan on slow heat for a minute.
 Melt the ghee in the same pan. Add grated apples and cook till dry.
 Then add the toasted coconut, milk powder, jaggery, cardamom powder, salt and saffron. Mix well and cook till the mixture becomes dry and soft.
 Pour the mixture into the prepared tray and spread the mixture
 Sprinkle chopped nuts and rose petals evenly on top and press down slightly with a spoon.
 Allow it to cool down to room temperature, and refrigerate for 4 hours.
 Cut the burfi into bars and serve.
